SPANAKOPITA 
1 med. onion
3/4 tbsp. flour
3 eggs
1/2 lb. dry cottage cheese
6 filos for bottom
6 filos for top
2 oz. butter
1/2 c. milk
1/2 lb. feta cheese
1 box frozen spinach

Saute onion in butter. Add flour and 1/2 cup milk to make a thick white sauce. Season with salt and pepper. In the beater bowl, place eggs and beat until foamy. Add 1/2 pound feta cheese, 1/2 pound dry cottage cheese, then spinach chopped, completely thawed and drained. Add white sauce, taste and correct seasoning. Place 6 filos on the bottom of Pyrex dish, brushing with melted butter between each layer. Fill with the spinach - cheese mixture. Place 6 filos on top, brushing with butter between each leaf. Bake at 350 degrees for 1 hour.

NOTE: Be sure to turn all leaves under. Place 1 filo leaf on top, brush with butter.

A very fancy Hors d'Oeuvre; one that you will be remembered for.
