ZUCCHINI BREAD 
4 eggs
3 c. sugar
1 1/2 c. oil
1 1/2 tsp. vanilla
3 c. grated zucchini, peeled
3 c. flour
1/2 tsp. salt
1/2 tsp. baking powder
1 1/2 tsp. baking soda
2 tsp. cinnamon
1 1/2 c. chopped nuts
1 c. drained, crushed pineapple
1/2 c. chopped maraschino cherries

Beat eggs, sugar, oil and vanilla together. Add dry ingredients alternately with zucchini and pineapple. Stir in nuts and cherries. Pour into greased and floured loaf pans. Bake at 350 degrees for 1 hour or until toothpick inserted in center comes out clean. Freezes well. Makes 4 loaves.
