ZUCCHINI PINEAPPLE BREAD 
3 eggs
1 c. oil
2 c. sugar
1 tsp. vanilla
2 c. zucchini, coarsely chopped
1 can crushed pineapple (8 1/2 oz.)
3 c. flour
3/4 tsp. nutmeg
1/2 tsp. cinnamon
1 tsp. salt
2 tsp. baking soda
1/2 tsp. baking powder
1/2 c. chopped nuts
1/2 c. raisins

Preheat oven to 350 degrees. Oil and flour 2 loaf pans. Beat eggs until foamy. Add oil, sugar and vanilla. Add zucchini and pineapple.

In a separate bowl, mix flour and other dry ingredients. Add dry mixture to zucchini mixture and stir thoroughly. Add nuts and raisins. Pour into pans and bake for 1 hour.
