POTATO REFRIGERATOR ROLLS | |
1 1/2 c. warm water 1 pkg. (1 tbsp.) yeast 2/3 c. sugar 1/2 tsp. salt 2/3 c. soft shortening 2 eggs 1 c. lukewarm mashed potatoes 7 to 7 1/2 c. flour Put in bowl, dissolve yeast in water. Stir in sugar, salt, shortening, eggs, and potatoes. Mix in about 1/2 cup of flour, then the remaining flour until dough is easy to handle. Knead 5-10 minutes. Place greased side up, in bowl. Cover, place in refrigerator, about 2 hours before baking shape in rolls. Cover. Let rise until double, 1 1/2 to 2 hours. |
