POTATO REFRIGERATOR ROLLS 
1 c. milk
1/4 c. sugar
2/3 c. shortening
1 tsp. salt
1 c. mashed potatoes
1 pkg. dry yeast
1/2 c. lukewarm water
5 1/2-6 c. flour

Scald milk in large pot. Add sugar, shortening, salt and mashed potatoes. Stir to mix and cool. Dissolve yeast in lukewarm water and add to cooled milk mixture.

Using a heavy spoon, mix yeast and eggs into this mixture and then begin adding the flour, a cup at a time; mix well. Do not let rise. Place dough in greased bowl; turn once to grease the surface. Cover and chill at least 2 hours or up to a week.

About 2 hours before serving: Take out the amount of dough needed and shape the dough as desired on a floured surface. Place in greased pan. Brush shortening on top of each roll. Place in warm place and let rise until doubled in size. Bake at 400 degrees for 15-20 minutes.
