SWEET POTATO AMBROSIA 
6-7 c. sliced, cooked or canned, drained sweet potatoes
1 c. crushed pineapple
1 lemon, sliced
1/2 orange
1/2 c. brown sugar
1/2 c. melted butter
1/2 tsp. salt
1/2 c. shredded coconut

Alternate layers of sweet potatoes and sliced fruit in baking dish. Combine pineapple, sugar, salt and butter and pour over casserole. Bake at 350 degrees for 30 minutes. Sprinkle with coconut and add stem cherries if desired. Serves 8-10. "This is a good one."
