SWEET POTATO SNOWBALLS 
1/2 c. brown sugar
1/2 tsp. ground cinnamon
1 tbsp. butter
2 c. cooked, mashed sweet potatoes
1 c. shredded coconut
10 marshmallows

Blend sugar, cinnamon and butter with mashed sweet potatoes until smooth and well mixed. To form balls, firmly coat each marshmallow with potato mixture until well covered. Then roll each potato ball in coconut. Put balls in a buttered baking dish and bake at 350 degrees for about 5 to 10 minutes or until marshmallow in center becomes slightly soft, but not melted. Yield: 10 potato balls.
