SPINACH SOUP | |
6 tbsp. butter 1 c. chopped green onions 2 c. Cremora (non-dairy creamer) 1 lg. can chicken broth (or 4 small ones) 2 med. potatoes; pared, quartered and sliced thin 2 med. carrots; sliced very thin 1/4 c. raw rice 1 (10 oz.) pkg. frozen chopped spinach 1 tsp. salt Cook onions in butter until soft, but not brown. In large kettle or saucepan, bring broth to a boil. Add Cremora. Stir well. Add onions, potatoes, carrots and rice. Simmer 15 minutes. Add spinach and simmer 15 minutes more. |
