YELLOW PEA AND SPINACH SOUP 
1/2 c. chopped onion
2 tsp. minced garlic
2 tsp. olive oil
1 c. yellow split peas, washed
4 c. chicken broth, unsalted
2 c. water (or leftover liquid in which vegetables were cooked)
10 oz. pkg. frozen chopped spinach
1/2 tsp. salt (optional)
1/8 tsp. pepper

Saute onion and garlic in olive oil in large pot, covered. Add yellow split peas, chicken broth and water. Bring to a boil, then lower heat and simmer for 30 minutes. Add spinach, salt and pepper. Simmer for about 30 minutes more. Makes 4 generous servings.

Excellent soup. Added a smoked turkey leg to the recipe and served with cornbread. Yum!
