YELLOW PEA SOUP 
2 c. whole dry yellow peas
1 lg. onion, diced
2 - 2 1/2 qts. water
Salt to taste
Ham bones or chunks of ham
1/4 tsp. pepper

Clean and wash peas; soak overnight in 1 1/2 quarts of water. Use this water to cook the peas in. Cut up meat and place in crock pot with the peas and onions. Add salt, pepper and water to fill the pot. Stir occasionally. Cook 10 to 12 hours on low heat or 5 to 6 hours on high heat. Check to see if peas are done.
