DIJON VINAIGRETTE 
1/4 c. Dijon mustard
3 tbsp. red wine vinegar
3 tbsp. soft (silken) tofu
1 tbsp. white wine vinegar
1 tbsp. grated onion
2 cloves garlic, minced
1/2 tsp. dried basil
1/4 to 1/2 tsp. salt
1/8 tsp. freshly ground black pepper
2 drops hot red pepper sauce

Combine all ingredients in a jar or bowl and shake or whisk until blended. Shake before using. Makes 3/4 cup.
