BAKED SPINACH AND HAM FRITTATA | |
8 eggs or 2 (8 oz.) egg substitute 1/4 tsp. basil, crushed 1/8 tsp. pepper 1/2 c. chopped onion 1 tbsp. butter 10-ounce pkg. frozen chopped spinach, thawed and well drained 4 oz. thin sliced ham or turkey-ham, chopped 1 tbsp. grated parmesan cheese Beat together eggs, basil and pepper. In a 10-inch skillet, cook onion in butter until tender. Remove from heat and stir in spinach and ham. Add egg mixture and return to heat. Cook until egg are set. Sprinkle with parmesan cheese. |
