COCONUT POUND CAKE 
1 1/3 c. vegetable oil
5 eggs
1 tsp. salt
2 tsp. coconut flavoring
2 1/4 c. sugar
3 c. all-purpose flour
1 tsp. baking powder
1 c. milk
1 (7 oz.) can flaked coconut

Cream oil and sugar. Add eggs and beat on high speed for 10 minutes. Sift flour, baking powder and salt. Mix with creamed mixture, adding milk. Add flavoring and mix well. Fold in coconut. Pour into 10 inch greased tube pan. Bake at 325 degrees for 1 hour and 25 minutes. Sprinkle with powdered sugar, if desired.
