RICOTTA MEATLOAF 
2 lb. ground beef
1 lb. Ricotta cheese
2 eggs
Salt and pepper to taste

Mix meat with eggs; then add salt and pepper and Ricotta cheese. Mix thoroughly. Stir in 1 1/2 cups tomato sauce (recipe below). Place mat mixture into casserole dish and form into loaf. Top with remaining sauce and place uncovered into preheated oven 375 degrees for 45 minutes.

TOMATO SAUCE:

2 tbsp. oil
1 lb. 1 oz. can tomatoes and liquid
2 tbsp. Worcestershire sauce
1/2 tsp. pepper
1/2 tsp. oregano
Tabasco sauce to taste
1 lg. onion, chopped
12 oz. can tomato sauce
6 oz. can tomato paste
1/2 tsp. salt
1 tsp. garlic powder
1 1/2 tsp. sugar

Heat oil in sauce pan and saute onion until soft; add tomatoes and liquid, tomato sauce and paste. Cook slowly until rawness is removed from tomatoes. Add remaining ingredients; simmer slowly 3 to 5 minutes.
