SQUASH CASSEROLE 
3 lb. yellow squash
2 med. onions, chopped
Salt & pepper
1 c. evaporated milk
1/2 c. butter
2 beaten eggs
2 tbsp. sugar
2 c. grated cheddar cheese
Buttered crushed crackers

Preheat oven to 350 degrees. Scrub squash and slice. Cook squash and onions covered, with salt and pepper; no water until both are done. Drain in colander thoroughly. Mash squash and add cream, butter, eggs, sugar and cheese. Turn into shallow casserole and top with buttered, crushed crackers. Bake 25-30 minutes.
