YELLOW SQUASH CASSEROLE 
3 c. squash
2 eggs
1 c. evaporated milk
1 c. grated cheese
3/4 stick butter, melted
1 tsp. salt
1/2 tsp. black pepper
1 c. chopped onion
2 c. cracker crumbs

Cook squash until tender before measuring. Drain off water, add butter, salt, pepper and milk. Mix all together, then add beaten eggs, onions, cheese and cracker crumbs. Pour into a greased casserole dish and bake at 375 degrees for about 40 minutes.
