PUMPKIN CREME CHEESE CAKE 
2 c. sugar
2 c. pumpkin
1 1/4 c. salad oil
4 eggs
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
2 c. flour
1 tsp. cinnamon
1/2 c. flaked coconut
1/2 c. chopped walnuts

Beat sugar and oil. Add eggs one at a time and add pumpkin. Mix all dry ingredients together and add to mixture then fold in coconut and nuts. Bake at 350 degrees for 25 to 30 minutes.

Frost with the following:

1/2 stick butter
1 (8 oz.) pkg. cream cheese
1 box 10x sugar
1 tsp. vanilla

Mix then add 1/2 cup coconut and 1/2 cup chopped walnuts. Spread over cake.
