CRAB MEAT AU GRATIN 
2 tbsp. butter
2 c. fresh lump crab meat
Salt & pepper to taste
1/2 c. cream
2 beaten egg yolks
1/2 c. grated cheese
Lemon wedges

Preheat oven to 350 degrees. Melt butter over moderate heat, add crab meat, salt and pepper. Cook for 5 minutes without browning. Mix cream with egg yolks and hot crab meat. Cook for 5 minutes stirring constantly. Pour into 1/2-quart casserole dish. Sprinkle cheese over top. Bake until 350 degrees, cheese is melted. Serve hot!
