HAWAIIAN BANANA BREAD 
1 1/2 c. sifted flour
1 c. sugar
1/2 tsp. salt
1 tsp. baking soda
1/2 c. vegetable shortening
3 sm. very ripe bananas or 1 c. pulp
2 eggs

Sift dry ingredients into bowl. Add shortening and mix with your fingers or pastry blender. Add the well-mashed bananas and the well-beaten eggs. Fold in quickly like muffin batter. Pour in greased and floured 9 x 9 x 2 inch pan or round cake pan. Bake 40 to 45 minutes at 350 degrees or until cake tester tests done.
