EASY APPLE CAKE 
2 c. diced apples
1 c. sugar
1/4 c. vegetable oil
1 c. flour
1/4 tsp. salt
1 tsp. vanilla
1/2 c. chopped nuts
1 egg (beaten)
1 tsp. baking soda
1 tsp. cinnamon

Place apples in a mixing bowl; add sugar and mix. Let stand 1/2 hour. Then add oil and egg and blend well. Sift all dry ingredients on apple mixture, add walnuts and mix well. Add vanilla and stir well again. Turn into well greased and floured 8 x 8 pan. Bake 45 to 50 minutes in 350 degree oven. Cool in pan 10 minutes. Serve warm with whipped cream or serve cold.

I'm not much of a baker, but I made these and it was easy and delicious! I peeled and diced my apples first and tossed them in a couple tablespoons of O.J. and then tossed in a little cinnamon sugar before I combined with batter.

Very moist. Family loved it. Omitted chopped nuts. Used 3 med cortland and 1 jonathan apples. Wonderful mix of flavor. Will try with a crumb topping next time and maybe some cranberries. will let you know how it turns out
