HAWAIIAN CHUTNEY 
3 lg. papayas, peeled, seeded and finely chopped
3 lg., firm pears, cored, pared and finely chopped
3 lg. onions, chopped
1 c. golden raisins
3 c. sugar
1 1/2 c. apple cider vinegar
3 tsp. salt
2 tsp. mustard seed
1 tsp. ground ginger
1/4 tsp. cayenne

Combine papaya, pears, onion and raisins in a large kettle; stir in sugar, vinegar, salt, mustard seed, ginger and cayenne. Bring to boiling, stirring often. Lower heat; simmer, stirring frequently near the end of cooking time to prevent scorching, 30 minutes, or until mixture thickens. Ladle into hot, sterilized jars; seal, label and date. Makes 7 (8 oz.) jars.
