BAKED STUFFED SHRIMP | |
12 jumbo shrimp, about 5" long 1/2 lb. scallops 1/4 c. butter, melted 1/4 tsp. paprika 2 tbsp. crushed potato chips 1/4 c. cracker meal 3 tbsp. grated Parmesan cheese With a sharp knife, cut shrimp from underside through meat but not through shell. Wash and devein. Put a toothpick through the meat at the thick part and it will hold the shrimp open while cooking. Just be sure you remind yourself that they are in there when serving. Put the shrimp in individual ramekins or any oven proof glass dish. Put about 1/4 teaspoon of melted butter in each dish along with 1 tablespoon of water. When this is completed, add scallops, can use crab meat or both. Next, combine melted butter and paprika in small saucepan. Simmer together for about 3 minutes. Be sure to watch closely because this mixture will burn easily. Pour this mix over the chips and cracker meal. Add Parmesan cheese and mix lightly. Divide between dishes and put on the top. Drizzle with a little more melted butter and bake at 350 degrees for about 35 minutes. Check for doneness by lifting filling and looking to see if the shrimp is done through. Continue cooking if not. (Be sure to cut the scallops into smaller pieces.) |
