LEMON CAKES 
1 pkg. cake mix (white or yellow)
1 pkg. Jello lemon instant pudding
3/4 c. water
3/4 c. salad oil
Juice of 1 lemon (and rind, if you want)
4 eggs

GLAZE:

1/2 lb. powdered sugar
3 lemons (juice - rind, optional)

Mix cake mix and all other ingredients well. Fill 1/2 full - small muffin tins. Bake at 350 degrees for 6 minutes, then 6 minutes at 300 degrees. Remove immediately from tins, dip in glaze, let cool. Makes about 4-5 dozen. Can freeze.

I fix the glaze first. Also, you can add more sugar if you want the glaze thicker.
