SWEET POTATO CASSEROLE 
3 c. cooked mashed sweet potatoes
1 c. sugar (white)
2 eggs
1 tsp. vanilla extract
1/3 c. milk
1/2 c. butter
1/2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/2 c. crushed pineapple
1/4 c. flaked coconut
1 c. firmly packed brown sugar
1/3 c. all purpose flour
1/3 c. butter
1 c. finely chopped pecans

Combine sweet potatoes, sugar, eggs, vanilla, milk and 1/2 cup butter; beat with electric mixer until smooth. Add cinnamon, nutmeg, pineapple and coconut. Mix until well blended. Spoon into greased 2 quart shallow casserole dish.

Combine brown sugar, flour, 1/3 cup butter and chopped pecans. Sprinkle over top of casserole. Bake at 350 degrees for 30 minutes.

This dish is rich in taste so it is often used as a dessert for Thanksgiving Holidays.
