COCONUT MACAROONS 
4 egg whites
2/3 c. sugar
1/4 c. flour
1/8 tsp. salt
1/2 tsp. almond extract
4 c. coconut

In a medium bowl, beat egg whites until foamy. Add sugar, flour and salt, almond extract and mix well. Fold in coconut. Drop dough by scant tablespoon 2 inches apart. Heat oven to 350 degrees. Grease and lightly flour pan. Cook 13 to 17 minutes.
