SQUASH CASSEROLE 
2 lbs. yellow neck squash
1 med. onion, chopped
2 beaten eggs
1 c. milk
2 c. grated Cheddar (Sharp) cheese
1 1/2 c. soda cracker crumbs
1 stick melted butter
1 1/2 tsp. salt
1 tsp. pepper
1 tsp. sugar

Cook pared squash and onion for 8 - 15 minutes. Drain. Mash. Add all other ingredients and pour into buttered casserole. Bake 10 minutes at 300 degrees.

May substitute 2 cups Swiss Cheese.
