MOCK TURTLE SOUP | |
2 lbs. ground beef 2 1/2 tbsp. allspice 1 1/2 tbsp. salt 1 tbsp. sugar 1/2 bottle regular size catsup 1/2 bottle Worcestershire sauce 12 oz. tomato puree 1 carrot 3 stalks celery 2 whole lemons 2 onions 3/4 c. white wine 3 hard boiled eggs 15 or 20 ginger snaps Brown ground beef; combine with next 6 ingredients. In a blender or food processor puree the carrot, celery, lemons and onions with 2 quarts water; add wine and vegetable mixture to beef mixture. Simmer 1 hour. Add 3 chopped hard- boiled eggs and break ginger snaps into mixture. Simmer another 1 1/2 hours. Hearty, robust and filling! |
