BROCCOLI AND ONION CASSEROLE 
3 tbsp. flour
1/2 c. evaporated skim milk
1 lg. bunch broccoli, cut into bite size pieces
1/4 c. onions
1 1/2 c. part skim Mozzarella cheese, grated
Black pepper
1 1/2 c. skim milk

Stir flour into 1/2 cup milk; blend. Add rest of milk. Arrange layers of broccoli, onions, and cheese in a lightly oiled casserole, with layer of cheese on top. Season with pepper. Pour milk sauce over all. Bake at 350 degrees for 1 hour.
