CUCUMBER AND ONION SALAD 
1 lg. onion
2 lg. cucumbers
1/2 c. vinegar (apple cider)
Salt
Pepper
1/2 c. water

Slice onion thin. Separate onion into rings. Place in deep bowl. Slice cucumbers thin; place in bowl; mix. Add 1/2 cup apple cider vinegar, 1/2 cup water, and salt and pepper to taste. Chill before serving. To chill faster, put ice cubes on top of salad and mix in place of water.

What is really great about this, is that if you have leftover onions from the salad you can put them over mashed potatoes. So good.

We have an over abundance of cucumbers from our garden. I am always looking to try something different/new for my family. I made this a few days ago (with a few modifications) and it was wonderful. I added 1/2 tsp. lemon juice, used 1/2 tsp. salt and 1/4 tsp. black pepper. But what made it tangier is that I made it WITHOUT water...cucumbers already contain a large % of water. Thank you.

This is a really old recipe. I use more more vinegar than water... I can remember this served as a side dish back in the 50's... Outstanding.! Do this at least 1 hour before your meal... 2 hours is even better! They are almost pickled.
