COCONUT COOKIES 
2 c. brown sugar, packed
1 c. shortening
2 eggs
1 tsp. vanilla
1 tsp. coconut flavoring
3 1/2 c. flour
2 tsp. baking soda
2 tsp. cream of tartar
1 c. coconut

Cream sugar and shortening. Beat in eggs and flavorings until fluffy. Sift in flour, soda, and cream of tartar. Add coconut. Mix well. Roll into small balls. Flatten with wet fork (or flat-bottom glass dipped in white or colored sugar) on ungreased cookie sheet. Bake at 350 degrees for about 8 minutes. Makes 50-60 (2 inch) cookies.
