GERMAN APPLE CAKE 
2 eggs
1 c. vegetable oil
2 c. sugar
1 tsp. vanilla
1 tsp. baking soda
1 1/2 tsp. water
2 c. flour
2 tsp. cinnamon
1/4 tsp. salt
1 c. chopped nuts (walnuts or pecans)
4 c. peeled & thinly sliced apples

Beat eggs with the oil until foamy. Add the sugar, vanilla, baking soda (dissolved in the 1 1/2 teaspoons water), flour, cinnamon and salt. The nuts and apples should be folded in because the batter is so thick. Bake in a greased 13 x 9 inch pan at 350 degrees for 50 to 60 minutes. Cool at room temperature and frost or sprinkle with powdered sugar.

FROSTING FOR APPLE CAKE:

1 (3 oz.) pkg. cream cheese, softened
1 1/2 tbsp. melted butter
1/2 tsp. vanilla
1 c. powdered sugar

Mix all of the above and spread on the cooled cake.
