HOMINY CASSEROLE 
1 (#2 1/2) can hominy, drained
1 sm. onion, chopped
1/2 c. green pepper, chopped
1/4 c. pimiento, chopped
1 tsp. salt
1/2 tsp. dry mustard (or 1 tsp. salad mustard)
1/2 c. olives, either ripe or stuffed
1/4 lb. sharp cheese
1 1/2 c. milk
3 tbsp. flour

Cook onion and pepper in a little butter, but don't brown. Add flour and milk and cook until thick. Melt cheese in sauce and add olives and pour over hominy and bake (Top with buttered bread crumbs), 40 minutes at 375 degrees.
