CELERY - EGGPLANT CASSEROLE 
1 med. eggplant, peeled & cooked
2 c. celery, chopped
1 onion, chopped
1 egg
1/2 stick butter, melted
2 slices bread, crumbled
Salt to taste
1 1/2 c. shredded Cheddar cheese

Combine eggplant, celery, onion, egg, butter and bread crumbs. Salt and cheese. Place in greased 2 1/2 quart casserole dish. Bake at 350 degrees for 45 minutes.
