LAMB CHOPS WITH PAPAYA SALSA | |
1 med. papaya, peeled, seeded and diced 1/2 cucumber, peeled, seeded and diced 1/2 med. red onion, thinly sliced 2 tbsp. chopped fresh mint (or 1 tsp. dried) 1 tbsp. grated fresh ginger Zest of 1 lime Juice of 2 limes 8 sm. loin lamb chops, trimmed of fat In a bowl combine all ingredients except chops. Toss well and let sit for 20 minutes. Preheat broiler. Place chops on rack and season with salt and pepper. Broil 10 minutes per side and serve with salsa. Serves 4 - 226 calories. |
