EGGPLANT PARMIGIANA 
1 lg. eggplant
Salt
4 tbsp. butter
1 lb. ground beef
2 tbsp. parsley, chopped
1/2 c. chopped onion
1/4 tsp. pepper
1 tsp. salt
1 can tomatoes
1/4 c. Parmesan cheese
6 slices Mozzarella cheese

Peel eggplant and cut in slices. Sprinkle with salt and let stand 5 minutes. Pat dry. Saute in butter until golden brown. Place on paper towel. Brown meat and add all other ingredients, except cheese. Cook 10 minutes.

Grease baking dish. Alternate layers of eggplant and meat mixture; sprinkle with Parmesan cheese and top with slices of Mozzarella cheese. Bake 30 minutes in 350 degree oven.
