SPINACH - RICE CASSEROLE 
1/2 c. chopped onions
1/2 stick butter
1 pkg. (10 oz.) frozen spinach
1 c. minute rice
1 can cream of mushroom soup
2/3 c. grated Velveeta cheese
1/2 c. milk

Thaw and drain spinach. Saute onions in butter. Mix with remaining ingredients. Bake in greased shallow baking dish at 350 degrees for 30-40 minutes. Serves 8. (More cheese may be used at discretion of cook.)
