CRISP KRAUT SALAD 
1 can sauerkraut, rinse & squeeze
1 sm. onion, chopped
1 1/2 c. celery (real green), chopped
1 sm. green pepper, chopped
1/2 c. oil
1/2 c. vinegar
Pimento, if desired for color

Mix all ingredients and refrigerate for 3 hours to marinate. Very colorful and crispy, as well as tasty.
