“FETTUCCINE ALFREDO” IS IN:

FETTUCCINE ALFREDO 
1 lb. fettuccine
1/2 cup (1 stick) butter
2 cloves garlic, chopped
2 1/2 cups light cream or half & half
1 1/2 cups grated Parmesan cheese
1/2 teaspoon pepper
pinch of salt

Bring 4 quarts of water to a boil. Add 1 teaspoon salt when water is boiling.

Add fettuccine. Cook uncovered 10-12 minutes (or according to package directions). Drain; cover and set aside.

In a large skillet, melt butter. Saut chopped garlic over medium heat for 1 minute.

Stir in 1 1/2 cups cream or half & half (half & half = half milk/half cream).

Cook over medium heat 3-4 minutes, stirring constantly. When hot, stir in fettuccine. Add remaining cream or half and half, Parmesan cheese, and salt and pepper. Stir to mix well.

After 1-2 minutes, when pasta is hot, serve accompanied by extra cheese for sprinkling, if desired. We garnished ours with edible flowers (optional).

I made this with a few changes. Fat Free half and half, a combination of asiago, parmesan and romano cheeses and 8 ounces of chopped proscuitto.
Very good, but I think I would add all the milk and cheese prior to adding the noodles as with the noodles my arms got tired of stirring.

As a previous reviewer stated you must use a high quality fresh Parmesan. I melt the butter with the garlic, do not brown either. Add the heavy cream, I use a pint, once that is warm I add the parm. a little at a time. Stir almost constantly to keep it smooth and together.

Cathy, well first its a good idea to use fresh Parm/cheese. And when you are adding the cheese into the milk you should turn off the heat right after adding it. If you don't you can cause it to clump up, and that's where you might be getting your grainy taste from. When your fully done blending it in you can turn the heat on again but this time leave it on low just to keep it warm. Hoped I helped.

Quick and very easy but not a do over. My crew couldn't get excited about this recipe. Pepper was fine but it just didn't have much flavor. Very basic and boring.

Just wanted to add that for a stronger richer flavor, be sure to grate fresh high quality Parmesan rather than any pre-shredded or grated type. Also, as strange as it sounds, I add some grated nutmeg and it really sets off the flavor for me. Just a bit, not as to overpower it.
