SHRIMP GUMBO 
3 lg. onions, sliced
1 (16 oz.) pkg. frozen cut okra
1 (16 oz.) can stewed tomatoes
2 c. water
1/2 lb. hot sausage, diced or sliced
2 lbs. shelled, deveined shrimp
1 (8 oz.) can tomato sauce
2 tbsp. bacon drippings
2 cloves garlic, chopped
1/2 tsp. crushed red pepper flakes
1 bay leaf
Salt and pepper to taste

Combine all ingredients, except shrimp, in a Dutch oven and heat until boiling. Reduce heat and simmer, partially covered, for 30 minutes. Add shrimp; mix well and continue to cook, partially covered, stirring occasionally until shrimp are cooked through. Approximately 10-15 minutes longer. Serve over hot rice.
