CHICKEN GUMBO 
1 c. shortening
1 c. flour
1 c. chopped onions
1 c. parsley
1 c. chopped celery
2 whole chickens, 3 lb. each
2 lg. smoked sausages
1 lb. shrimp
1 lb. pkg. pepperoni
1 pt. oysters
2 lb. rice

Brown flour in shortening in a very large pot; after flour is dark brown, add onions, parsley, celery and fry for about 2 minutes. Fill pot 3/4 full of water, adding salt and pepper to taste. Let boil for 5 minutes. Add chicken, smoked sausage, pepperoni, shrimp and oysters. Boil until chicken is tender. Last add 4 tablespoons of gumbo fillet.
