SPINACH PIE 
40 oz. chopped, cooked spinach
1/2 c. olive oil
1 chopped onion
1 tsp. dill/parsley
3/4 lbs. Feta cheese
1 c. Ricotta cheese
3 eggs
1/2 c. Parmesan cheese
1 stick butter
8 layers filo dough

Heat oven to 350 degrees. Fry in oil, onion, dill, and parsley. Add spinach, eggs, and cheeses. Brush filo dough sheets with melted butter. Use 4 sheets on the bottom. Add spinach mixture; then 4 sheets on the top. Fold filo to seal and bake at 350 degrees for about 40 minutes. Serve hot or cold with chipped scallions on the top.
