SAUSAGE GRAVY | |
How I make Sausage Gravy, submitted by 'An Ol Timer' Sausage salt and pepper, to taste Options: onions, onion powder, bell peppers any color or all colors, a flick of Tabasco sauce even if you like, I use red pepper flakes for mine too, just enough to make it spicy. Some old coffee from your cup or a pot off the stove, or automatic kind works fine. Just enough to clean the gooey stuff stuck in the pan, you want that in the gravy too! I read you can add sage if you like, I am gonna try that tonight, yes dinner with biscuits and sausage gravy! Did I hear someone say" Top it with Cheddar Cheese?..wow what an idea...maybe even some white Jack cheese? Oh too much!!! Now you can put some onions and/or bell peppers in first before browning the sausage with a little butter, sweat them, or just use onion powder and you don't need butter or need to cut any onions up, but butter is always good, some bell pepper, green, yellow, red, orange, whatever color you feel like, it is all good. You could even add just about anything you want. It's gravy!! Brown your sausage, bell peppers, onions, and seasonings you choose...see all that yummy stuff stuck to the bottom of the pan? Remove sausage mix if you want, drain off some of that excess oil, you will want one or two tablespoons left in the pan, just eye it, reduce heat to medium low or there abouts. While the pan is still hot, pour in a little coffee, watch the spattering though! This will help you remove all that goodness from the bottom of the pan - use a large spoon. Once the moisture has reduced some, or all the stuck stuff is loose, add flour depending upon how much gravy you want, a good grab with your fingers will do, or a heaping tablespoon plus a little. Mix it around and make it pasty and cook it a little. Now pour in some milk, oh about a cup or more, again, depends on how much and how thick you want your gravy. Right here I add a few red pepper flakes, just enough to make it a little spicy... Be sure to put all the sausage mix back in the pan first and cook it all together for a minute or two on medium low or 2.8 or lower stirring constantly and taste it? MMMM good, might wanna add some more salt 'n pepper, maybe needs more pepper flakes or some Tabasco, drop or two only? Let it cook until it reaches the thickness you desire...bubbling slightly as not to burn it or stick it by stirring constantly, usually a few more minutes. Remember, the coffee is the secret! Tell everyone it's ready and by the time they get a plate, it will be done...jelly, eggs, fresh fruit, biscuits or bread, would be good to top with this most scrumptious sauce.
