SWEET AND SOUR CARROTS 
2 lbs. carrots, cooked & drained
1 onion, sliced thin
1 green pepper, sliced thin
1/2 c. oil
3/4 c. sugar
1 tsp. salt
1/2 c. vinegar
1 tsp. dry mustard

Place carrots, onion and green pepper in a dish. Heat oil, sugar, salt, vinegar and dry mustard. Pour over vegetables. Place in refrigerator overnight. Serve cold.
