PUMPKIN APPLE STREUSEL MUFFINS 
Cream together:

4 c. sugar
4 eggs
1 c. oil
1 sm. can pumpkin or about 2 c.

STEP 2:

Sift together:

6 c. flour
2 tsp. salt
2 tsp. baking soda
1 tsp. ginger
1 tsp. nutmeg
1 tsp. cinnamon
1 tsp. allspice
1 tsp. cloves

Add ingredients from Step 2 to Step 1 and mix only enough to moisten flour. Add 4 cups finely chopped apples.

STREUSEL FOR TOPPING:

6 tbsp. flour
3/4 c. sugar
1 1/2 tsp. cinnamon
1/4 tsp. butter

Mix well. Fill muffin tins level full, add Topping. Bake at 350 degrees for 40 minutes. Yields: 3 dozen. NOTE: Muffins freeze well and go from freezer to microwave oven for a fresh muffin.

Since microwave ovens vary in power, you may need to adjust your cooking time.
