FRESH CORN CASSEROLE 
2 c. corn, cut from cob
3 eggs or egg substitute
1/2 stick butter
1/4 c. sugar
1/2 tsp. salt
1/8 tsp. pepper
1 c. skim milk

Preheat oven to 350 degrees. Beat eggs. Add milk, sugar, salt, pepper and pour over corn. Turn into greased casserole dish. Dot with butter and bake 50 minutes or until knife inserted in center comes out clean.
