DANISH MEATBALLS | |
1 lb. ground beef 1 sm. onion, grated 1/2 c. fine dry bread crumbs 1 tsp. salt 1/4 tsp. pepper 1/8 tsp. nutmeg 1/8 tsp. marjoram 2 eggs 1/2 c. milk Combine all ingredients and mix lightly. Shape into balls. Brown on cookie sheet 10 minutes at 400 degrees. Makes 24 regular size or 48 cocktail size. Remove meatballs from cookie sheet and place in top of stove pan. Pour 1 can condensed consomme over meatballs. Cover. Simmer 15 minutes. Remove meatballs with slotted spoon. Keep hot while making sauce. SAUCE: Pour all liquid from pan into measuring cup. Add water to make 1 cup. Return to pan. Heat to boiling. Blend 2 tablespoons flour with 3 tablespoons water. Put a little of hot mixture into flour and water mixture and blend. Then add flour and water mixture to remainder of hot liquid in pan. Cook, stirring constantly until thickened. Boil 1 minute. Stir in 2 tablespoons sweet pickle relish. Pour over all meatballs. Serve over hot noodles. |
