RAGU 
2 c. chopped onions
1 c. chopped green peppers (about 2 med.)
4 (6 oz.) cans tomato paste
9 c. fresh tomatoes, peeled and cored
2 tbsp. brown sugar
2 tbsp. minced parsley
1 tbsp. oregano
1 1/2 tbsp. salt
Garlic (optional)
1/2 tsp. ginger
1/2 tsp. allspice
2 tbsp. vinegar
1/2 tsp. pepper
1 clove pod

Blanch tomatoes, peel and core. Add chopped green pepper and chopped onions. Place in blender until liquified. It takes about 3 cups of tomatoes to about 1/4 cup onions, 1/4 cup peppers to each blender.

After all above ingredients have been blended, combine in large kettle, spices, vinegar and tomato paste and garlic (optional). Let simmer for 2 hours over medium heat. Stir often.
