POTATOES WITH SWEET AND SOUR SAUCE | |
5 lbs. potatoes, cooked, peeled and cubed 1 lb. bacon, rendered 1 1/4 c. cider vinegar 1/2 c. flour 1 1/2 c. granulated sugar Render the bacon in a large frying pan. Take the pan off the heat, remove bacon and drain on paper towels. Mix the flour in the grease in the pan to form a paste, the flour will absorb the grease. Mix the vinegar and sugar together and add to paste mixture in pan, stirring constantly to make a thinner sauce. Put the pan back on the burner to heat the sauce. Pour over the potatoes and mix thoroughly. Place all in a casserole and heat in a 350 degree oven for 1/2 hour. Crumble bacon over top before baking. |
