APPLESAUCE CAKE 
1/2 c. butter
3/4 c. granulated sugar
1 egg, beaten
2 c. all-purpose flour, sifted
1 tsp. salt
1 tsp. baking soda
1 tsp. mixed cake spice or cinnamon
1/4 tsp. powdered cloves
1 c. seedless raisins, chopped
1 c. walnuts, chopped
1 c. sweetened applesauce (fresh or canned)

This is an old recipe as the "mixed cake spice" would indicate. I have made this since I was a boy. I chose this recipe because it did not require me to separate the egg!

Work the shortening with the back of a spoon until fluffy and creamy. Gradually add sugar, while continuing to work with a spoon until light. (I'm sure the mixer would do a good job in the mixing department, if you have one.) Then add the egg. Sift together next 5 ingredients and combine with raisins and nuts. Heat applesauce to boiling point. Add to sugar mixture alternately with flour mixture. Turn into a greased or oiled loaf pan, about 9 x 5 x 3-inch. Bake in moderate oven of 350 degrees for 1 hour and 15 minutes, or until done.
