STRAWBERRY BREAD 
1 3/4 c. whole wheat flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/2 c. chopped pecans
1 (10 oz.) box frozen strawberries
2 eggs, beaten
1/2 c. oil
3/4 c. honey

In a large bowl, stir together dry ingredients. Cream together, honey, eggs and oil. Stir into dry ingredients. Add strawberries all at once. Mix. Turn into a greased 9 x 5 x 3 inch loaf pan. Bake in a preheated oven at 350 degrees for 1 hour. Cool in pan for 10 minutes, then turn out on a rack. A nice moist and quick bread.

I have made this hundreds of times as it is in such demand in my family. I've also changed out blueberries for strawberries and used reg flour vs the wheat. It freezes well so I always have an extra one for drop-in company. Serves as a breakfast bread or even a dessert with vanilla yogurt or ice cream.
